Making the Relish
- Begin by finely chopping your fresh jalapenos. Add minced garlic to enhance the flavor. Adjust the amount of seeds based on desired spiciness.
- Take small 4 oz mason jars and fill them with the chopped jalapeno and garlic mixture, leaving some space at the top.
- In a pot, bring to a boil 1 cup of white vinegar, 1/2 cup of water, 1/4 cup of sugar, 1 teaspoon of celery flakes, and 1 teaspoon of kosher salt. Remove from heat after boiling and let it sit for 2 minutes.
- Pour the hot liquid over the jalapeno mixture in the jars. Cool at room temperature for about 10 minutes before refrigerating.
- For extra kick, consider adding some chopped red onions to the mixture.
