Method
 

Making the Relish
  1. Begin by finely chopping your fresh jalapenos. Add minced garlic to enhance the flavor. Adjust the amount of seeds based on desired spiciness.
  2. Take small 4 oz mason jars and fill them with the chopped jalapeno and garlic mixture, leaving some space at the top.
  3. In a pot, bring to a boil 1 cup of white vinegar, 1/2 cup of water, 1/4 cup of sugar, 1 teaspoon of celery flakes, and 1 teaspoon of kosher salt. Remove from heat after boiling and let it sit for 2 minutes.
  4. Pour the hot liquid over the jalapeno mixture in the jars. Cool at room temperature for about 10 minutes before refrigerating.
  5. For extra kick, consider adding some chopped red onions to the mixture.
