Preparing the Fries
- Begin by using a mandoline to julienne the potatoes into thin strips, aiming for about 1/8 inch thick.
- Soak the cut potatoes in a bowl of cold water for 30 minutes.
- After soaking, dry them thoroughly with a towel to promote crispiness in the frying process.
- In a deep pot, heat oil to 350°F (175°C).
- Carefully fry the potatoes in small batches until golden brown and crispy, which should take about 3-4 minutes.
- Drain the fries on paper towels to remove excess oil.
