Method
 

Preparing the Fries
  1. Begin by using a mandoline to julienne the potatoes into thin strips, aiming for about 1/8 inch thick.
  2. Soak the cut potatoes in a bowl of cold water for 30 minutes.
  3. After soaking, dry them thoroughly with a towel to promote crispiness in the frying process.
  4. In a deep pot, heat oil to 350°F (175°C).
  5. Carefully fry the potatoes in small batches until golden brown and crispy, which should take about 3-4 minutes.
  6. Drain the fries on paper towels to remove excess oil.
  7. While still hot, sprinkle them generously with lemon salt and chopped rosemary.
  8. Serve the fries immediately for the best texture and flavor.
