  • 1 pound small new potatoes or waxy red-skinned/Yukon gold
  • 8 ounces green beans trimmed and cut into thirds
  • 1/2 cup black olives (dry salt-cured) or brine-cured, adjust to taste
  • 1/4 cup flat parsley or tarragon as a substitution
  • 2 tablespoons chives or shallots/green onions
  • 2 large hard-boiled eggs
For the Vinaigrette
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 2 cloves garlic minced; can use roasted garlic
  • 1 teaspoon Dijon mustard
  • 1 tablespoon capers or chopped green olives
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Prepare Hard-Boiled Eggs: Boil eggs for 1 minute, then let them sit off heat for another 10 minutes. Cool, peel, and quarter.
  2. Cook Potatoes: Halve or quarter potatoes and boil in salted water until tender (about 12 minutes).
  3. Add Green Beans: After potatoes are cooked, add green beans and cook for an additional 2-3 minutes. Transfer to an ice bath.
  4. Make Vinaigrette: Combine all vinaigrette ingredients in a jar, shake until well mixed and emulsified.
  5. Assemble Salad: Toss herbs with half vinaigrette, add cooled potatoes and green beans, mix gently, and top with eggs and remaining vinaigrette. Adjust seasoning if needed.
