- Prepare Hard-Boiled Eggs: Boil eggs for 1 minute, then let them sit off heat for another 10 minutes. Cool, peel, and quarter.
- Cook Potatoes: Halve or quarter potatoes and boil in salted water until tender (about 12 minutes).
- Add Green Beans: After potatoes are cooked, add green beans and cook for an additional 2-3 minutes. Transfer to an ice bath.
- Make Vinaigrette: Combine all vinaigrette ingredients in a jar, shake until well mixed and emulsified.
- Assemble Salad: Toss herbs with half vinaigrette, add cooled potatoes and green beans, mix gently, and top with eggs and remaining vinaigrette. Adjust seasoning if needed.
