- Boil the Potatoes: In a large pot, add cubed potatoes and cover with water. Sprinkle in a pinch of salt. Bring to a boil, then reduce heat and simmer for about 8-10 minutes until tender but firm.
- Cool the Potatoes: Drain the potatoes and let cool on the countertop.
- Combine Salad Ingredients: In a large bowl, combine cooled potatoes with parsley, dill, green onions, shallots, and cornichons.
- Whisk the Dressing: In a separate bowl, whisk together olive oil, vinegar, Dijon mustard, garlic, cornichon juice, salt and pepper.
- Mix and Coat: Pour the dressing over the potato mixture and toss until evenly coated.
- Chill or Serve: Chill for at least an hour or serve immediately.
