Ingredients
  

For the Salad
  • 1.5 pounds Potatoes Waxy varieties preferred
  • 1 cup Parsley Chopped; can substitute with basil or cilantro
  • 0.25 cup Dill Chopped; tarragon can be used instead
  • 0.5 cup Green Onions Sliced; red onions can be a substitute
  • 1 Shallot Optional; regular onion can be used
  • 0.5 cup Cornichons Optional; dill pickles can work as well
For the Dressing
  • 0.5 cup Olive Oil Can substitute with avocado oil
  • 2 tablespoons Red Wine Vinegar Or sherry vinegar
  • 2 tablespoons Dijon Mustard Whole grain can be used for texture
  • 1 clove Garlic Minced; optional
  • 1 tablespoon Cornichon Juice Optional; can use pickle juice or lemon juice
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Boil the Potatoes: In a large pot, add cubed potatoes and cover with water. Sprinkle in a pinch of salt. Bring to a boil, then reduce heat and simmer for about 8-10 minutes until tender but firm.
  2. Cool the Potatoes: Drain the potatoes and let cool on the countertop.
  3. Combine Salad Ingredients: In a large bowl, combine cooled potatoes with parsley, dill, green onions, shallots, and cornichons.
  4. Whisk the Dressing: In a separate bowl, whisk together olive oil, vinegar, Dijon mustard, garlic, cornichon juice, salt and pepper.
  5. Mix and Coat: Pour the dressing over the potato mixture and toss until evenly coated.
  6. Chill or Serve: Chill for at least an hour or serve immediately.
