  • 1 cup dried cranberries lightly sweetened, if preferred
For the Dressing
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 cup Greek yogurt or mayonnaise, avocado for vegan
  • 2 tablespoons apple cider vinegar or lemon juice
  • to taste salt & pepper

  • 1/2 cup nuts walnuts or sunflower seeds, add before serving

Method
 

Instructions
  1. Finely shred the cabbage and dice or thinly slice the fresh apples.
  2. In a large mixing bowl, combine the cabbage, apples, and cranberries. Toss gently.
  3. In a separate bowl, whisk together Greek yogurt, honey, and vinegar until smooth.
  4. Pour the dressing over the cabbage mixture and toss until coated.
  5. Season with salt and pepper. Refrigerate for at least 30 minutes before serving.
  6. Add nuts just before serving for extra crunch.
