How to Make Chicken Salad Cucumber Roll Ups
- Shred the cooked chicken and finely dice the red onion. Soak the onion in water for 10 minutes to mellow its flavor, then drain.
- In a large bowl, combine shredded chicken, soaked onion, chopped cilantro, and cubed avocado. Stir gently to mix.
- Blend cottage cheese, mayonnaise, onion powder, lime juice, cilantro, salt, and pepper in a food processor until smooth.
- Pour the smooth dressing over the chicken mixture and stir until everything is evenly coated.
- Thinly slice the English cucumbers and pat them dry. Arrange cucumber slices overlapping on parchment paper.
- Spread whipped cream cheese over the cucumber slices to help hold the roll ups together.
- At the lower end of each cucumber slice, place a generous amount of chicken salad mixture and roll tightly.
- Slice the roll ups into bite-sized pieces and garnish with everything bagel seasoning and hot sauce if desired.
