How to Make Aji Amarillo Sauce
- In a blender or food processor, place all the ingredients: aji amarillo paste, minced shallot, garlic, mayonnaise, Greek yogurt, crumbled feta cheese, ketchup, lime juice, salt, and pepper.
- Process the mixture until it’s smooth and creamy, scraping down the sides as needed.
- Taste and adjust lime juice, salt, or pepper as needed.
- Transfer to a bowl or airtight container and refrigerate for at least 1 hour.
