How to Make Aji Amarillo Sauce
  1. In a blender or food processor, place all the ingredients: aji amarillo paste, minced shallot, garlic, mayonnaise, Greek yogurt, crumbled feta cheese, ketchup, lime juice, salt, and pepper.
  2. Process the mixture until it’s smooth and creamy, scraping down the sides as needed.
  3. Taste and adjust lime juice, salt, or pepper as needed.
  4. Transfer to a bowl or airtight container and refrigerate for at least 1 hour.
