How to Make Tasty Korean Winter Soup
- Soak your beef short ribs in cold water for 1 hour.
- Prepare your aromatics: Chop a yellow onion, slice fresh ginger, and finely chop garlic.
- Combine the soaked ribs, sliced ginger, whole onion, green onion roots, and 10 cups of water in a large stock pot.
- Boil over medium-high heat until bubbling, then reduce the heat to medium and skim off any foam.
- Simmer uncovered for 1 hour, continuing to skim foam occasionally.
- Add in the radish slices and continue to simmer for another 20 minutes.
- Discard the aromatics and season your broth with guk ganjang, sea salt, and garlic.
- Serve hot in bowls, garnished with sliced green onions and black pepper.
