  • 1/2 cup Guk Ganjang (Korean Soup Soy Sauce) For gluten-free, use tamari or coconut aminos.
  • 1 large Yellow Onion Keep the skin on for added richness.
  • 4 cloves Garlic Can be used whole for milder taste or chopped for intensity.
  • 1 thumb-sized piece Fresh Ginger Slice into coins for easy removal later.
For the Add-Ins
  • 14 oz Tofu Use soft or firm based on preference.
  • 1 cup Korean Leek Substitute with regular leeks or a mix of green onions and chives.
  • 1 cup Daikon Radish Standard daikon recommended.
  • 2 stalks Green Onions Reserve some for garnishing.
For the Seasoning
  • 1 tbsp Sea Salt Adjust to taste.
  • 1/2 tsp Black Pepper Freshly ground for best aroma.

How to Make Tasty Korean Winter Soup
  1. Soak your beef short ribs in cold water for 1 hour.
  2. Prepare your aromatics: Chop a yellow onion, slice fresh ginger, and finely chop garlic.
  3. Combine the soaked ribs, sliced ginger, whole onion, green onion roots, and 10 cups of water in a large stock pot.
  4. Boil over medium-high heat until bubbling, then reduce the heat to medium and skim off any foam.
  5. Simmer uncovered for 1 hour, continuing to skim foam occasionally.
  6. Add in the radish slices and continue to simmer for another 20 minutes.
  7. Discard the aromatics and season your broth with guk ganjang, sea salt, and garlic.
  8. Serve hot in bowls, garnished with sliced green onions and black pepper.
