  • 1 head chopped romaine lettuce
  • 1 cup radicchio
  • 1 small red onion thinly sliced
  • 2 stalks celery diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup pickled pepperoncini peppers
  • 1/4 cup sun-dried tomatoes chopped
  • 1 can chickpeas drained and rinsed
  • 1/2 cup provolone cheese optional, diced
For the Dressing
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon honey
  • 1 clove garlic minced
  • 1/4 teaspoon freshly ground black pepper
  • to taste salt
  • 1/4 teaspoon red pepper flakes optional

Method
 

Preparation
  1. Combine all the fresh salad ingredients in a large serving bowl. Toss together the chopped romaine, radicchio, onion, celery, cherry tomatoes, pepperoncini peppers, sun-dried tomatoes, chickpeas, and provolone cheese if using until well mixed.
  2. Prepare the dressing by adding all dressing ingredients into a liquid measuring cup. Whisk together until nicely blended and taste for seasoning. Feel free to add more salt if desired!
  3. Dress your salad: If you’re serving all at once, drizzle enough dressing over the salad to lightly coat it, then toss to combine. Keep the dressing separate for leftovers to maintain freshness.
