  • 8 ounces Burrata Cheese Can substitute with fresh mozzarella
  • 6 whole Radishes For crunch
  • 1/2 cup Roasted Hazelnuts Chopped or whole
For the Dressing
  • 2 tablespoons Fresh Dill Chopped
  • 3 tablespoons Olive Oil Extra virgin preferred
  • 2 tablespoons Red Wine Vinegar Can substitute with apple cider vinegar
  • 1 tablespoon Honey Maple syrup is a vegan option
  • to taste Flaky Sea Salt
  • to taste Black Pepper

Method
 

Steps to Prepare Salad
  1. Preheat the oven to 425°F.
  2. Prepare the leeks by trimming, slicing them in half lengthwise, and rinsing them thoroughly.
  3. Place the leeks cut-side up on a sheet pan, drizzle with olive oil, and season with salt and pepper.
  4. Roast the leeks for 25 minutes until golden brown and tender.
  5. Add honey over the leeks and return to the oven for an additional 5 minutes.
  6. In a small bowl, combine sliced radishes, dill, vinegar, olive oil, and salt; toss to mix.
  7. Tear the burrata into pieces and arrange on a serving platter with leeks and blood oranges.
  8. Top with the radish mixture, hazelnuts, and drizzle with extra honey.
  9. Serve with crusty toasted bread.
