  • 1 cup Granulated Sugar or substitute with coconut sugar
  • 2 tablespoons Cornstarch or arrowroot powder for gluten-free option
  • 1 tablespoon Lemon Zest freshly grated
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Vanilla Bean Paste/Extract opt for quality vanilla
For the Crumble Topping
  • 1 cup All-Purpose Flour substitute with gluten-free flour if needed
  • 2 cups Rolled Oats quick oats may work but change texture
  • 1/2 teaspoon Sea Salt
  • 1/2 cup Soft Brown Sugar or coconut sugar
  • 1/2 cup Vegan Butter or substitute with coconut oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a 9" rectangular baking pan with parchment paper.
  2. In a mixing bowl, combine the chopped strawberries with granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla. Toss gently and set aside.
  3. In another bowl, whisk together flour, oats, sea salt, and brown sugar. Pour in melted vegan butter and mix until crumbly.
  4. Press ¾ of the crumble mixture into the baking pan, spread the strawberry filling, and top with remaining crumble mixture.
  5. Bake for 40-45 minutes until golden brown and bubbling.
  6. Allow bars to cool for at least 2 hours before slicing.
