How to Make Samoa Girl Scout Cookies
- Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
- Mix the almond flour with maple syrup in a medium bowl until it forms a smooth dough.
- Roll this dough out between two sheets of parchment paper for the perfect thickness.
- Cut out your cookies using a cookie cutter, ensuring a small hole in the center of each.
- Transfer the shaped cookies to the prepared baking sheet and bake for 25-30 minutes until golden.
- Let them cool completely after baking.
- Prepare the date caramel by soaking the pitted dates in boiling water for 10 minutes, then blend until smooth.
- Toast the shredded coconut over medium heat until lightly golden.
- Spread date caramel over each cookie, then press into the toasted coconut.
- Melt dark chocolate with coconut oil and dip the cookie bottoms into the chocolate.
- Chill the cookies in the freezer for about 20 minutes to set the chocolate.
