Preparation
  1. Prepare Dough: Start by mixing warm almond milk, sugar, and yeast in a bowl. Let it sit for 5-10 minutes until frothy, then combine with flour, salt, melted vegan butter, and lemon zest, knead until smooth.
  2. Rest Dough: Place the kneaded dough in a warm area and let it rise for about 1 hour until doubled in size.
  3. Make Filling: In a food processor, blend sugar, pistachios, and lemon zest until coarse but well-combined.
  4. Roll Out Dough: On a floured surface, flatten the risen dough, spread softened vegan butter over it, and sprinkle the filling mixture across.
  5. Shape Rolls: Roll the dough tightly into a cylinder and slice into 1-1.5 inch thick pieces, placing them in a greased baking pan.
  6. Final Rise: Cover with a kitchen towel and let the rolls rise for another 30 minutes while preheating the oven to 350°F (175°C).
  7. Bake: Bake the rolls for 25-30 minutes until golden brown.
  8. Glaze: Prepare the glaze by mixing powdered sugar, lemon juice, melted vegan butter, almond milk, and vanilla extract. Drizzle over warm rolls before serving.
