Ingredients
  

For the Stew
  • 1 can Banana Blossom canned banana blossom is a suitable alternative
  • 2 tablespoons Oil vegetable or coconut oil
  • 4 cloves Garlic minced
  • 1 medium Yellow Onion chopped
  • to taste teaspoon Sea Salt
  • 4 cups Water
  • 1 large Eggplants or substitute with zucchini
  • 2 cups Vegetable Broth for enhanced flavor
  • 1 tablespoon Achuete (Annatto Powder)
For the Sauce
  • 1 cup Peanuts raw, unsalted
  • 1/4 cup White Rice toasted and ground
  • 1 cup Long Beans or green beans
  • 1/2 cup Dried Snow Fungus or textured soy protein
  • 2 cups Baby Bok Choy other leafy greens as substitutes
  • 2 tablespoons Black Bean Sauce adjust to preference
  • optional Nori Seaweed Flakes can be omitted

Method
 

Preparation Steps
  1. Prepare the Banana Blossom: Peel layers, cut in halves, and soak in salt or lemon water.
  2. Sauté the Base: Heat oil, sauté garlic until fragrant, add onions and cook until translucent.
  3. Add Vegetables and Liquid: Stir in banana blossom, eggplant, water, vegetable broth, and achuete. Simmer until tender.
  4. Mix in the Sauce: Blend peanuts with a little water, add to pot with ground toasted rice. Cook until sauce thickens.
  5. Adjust Consistency: Add more water if sauce is too thick, season with sea salt to taste.
  6. Incorporate Additional Greens: Fold in long beans, snow fungus, and bok choy. Let sit briefly after boiling.
  7. Serve and Enjoy: Dish out hot, serve with steamed rice and black bean sauce.
