Ingredients
  

For the Pastry
  • 1 package Filo Pastry Thawed before use.
For the Filling
  • 400 grams Firm Tofu Crumble and marinate for flavor.
  • 2 medium Sweet Potatoes Peeled and sliced.
  • 2 medium Zucchini Peeled and sliced.
  • 1 bunch Fresh Mint Chopped, can substitute with dill.
For Flavoring
  • 3 tablespoons Extra Virgin Olive Oil For greasing and drizzling.
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Garlic Powder Can substitute with fresh garlic.
  • to taste Salt
  • to taste Pepper

How to Make Vegan Boureki
  1. Prepare Tofu: Rinse the firm tofu and squeeze out excess water; crumble it into a bowl. Mix in lemon juice, garlic powder, nutritional yeast, salt, and pepper. Set aside to marinate for 15-20 minutes.
  2. Prepare Vegetables: Peel the sweet potatoes and zucchinis, then slice them into thin chips.
  3. Layer the Pastry: Unroll the filo pastry, grease each sheet with olive oil and line a pie dish, letting the edges hang over.
  4. First Layer: Begin layering with half of the sliced vegetables, topping with marinated tofu and fresh mint, then drizzle with half the olive oil.
  5. Second Layer: Layer remaining vegetables, season again, and drizzle with the rest of the olive oil.
  6. Bake: Cover with foil and bake at 180°C for 1 hour and 20 minutes, remove foil and bake for an additional 10 minutes.
