For the Glaze
  • 1/2 cup Maple Syrup Agave syrup can be substituted
  • 1/4 cup Molasses Dark or light molasses work
  • 2 tablespoons Mustard Yellow mustard is best
  • 1/4 cup Orange Juice Freshly squeezed preferred
For the Spices
  • 1/2 teaspoon Allspice Adjust to taste
  • 1 teaspoon Cinnamon For added warmth
  • 1/4 teaspoon Espresso Powder Just a pinch enhances richness
  • 1/4 teaspoon Cayenne Pepper Adjust based on spice preference

Method
 

Preparation
  1. Preheat your oven to 425°F.
  2. Coat a baking sheet with nonstick spray.
  3. In a large bowl, toss sweet potatoes with olive oil, salt, and paprika.
  4. Spread the sweet potatoes out on the prepared baking sheet and roast for 20-25 minutes.
Glazing
  1. In the same bowl, whisk together maple syrup, molasses, mustard, orange juice, allspice, cinnamon, and cayenne.
  2. Combine roasted sweet potatoes with the glaze and return them to the baking sheet.
  3. Roast for an additional 5-8 minutes until caramelized and tender.
Serving
  1. Transfer the glazed sweet potatoes to a serving platter and drizzle with olive oil.
  2. Garnish with fresh herbs if desired.
