Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Spread the frozen tater tots and French fries on separate baking sheets in a single layer. Bake for 25-30 minutes, flipping halfway, until golden brown and crispy.
  3. Whisk together the egg yolks and lemon juice in a bowl. Place the bowl over a simmering pot of water. Gradually add the melted butter while whisking continuously until thickened.
  4. Melt butter in a nonstick pan over medium heat. Add the beaten eggs and cook gently, stirring until just set. Season with salt and pepper.
  5. Combine tater tots, fries, scrambled eggs, crumbled bacon, cooked sausage, and cheese curds in a bowl. Spread on a baking sheet and broil for about 1 minute until cheese melts.
