Method
 

Preparation
  1. Preheat the oven to 350°F and spray baking sheets with olive oil.
  2. Slice wonton wrappers into triangles, arrange on baking sheets, and bake for 8 minutes. Spray again with olive oil and bake for additional 4-6 minutes until golden brown.
  3. In a medium bowl, combine minced garlic, grated ginger, mirin, soy sauce, lemon juice, sesame oil, rice vinegar, and scallion whites. Mix well, add diced tuna, and refrigerate for 10-15 minutes to marinate.
  4. Move baked wonton chips to serving plate and top with marinated tuna, diced pineapple, jalapeño slices, diced avocado, and sesame seeds. Drizzle with spicy mayo and top with scallion greens.
