Preparation
- Preheat the oven to 350°F and spray baking sheets with olive oil.
- Slice wonton wrappers into triangles, arrange on baking sheets, and bake for 8 minutes. Spray again with olive oil and bake for additional 4-6 minutes until golden brown.
- In a medium bowl, combine minced garlic, grated ginger, mirin, soy sauce, lemon juice, sesame oil, rice vinegar, and scallion whites. Mix well, add diced tuna, and refrigerate for 10-15 minutes to marinate.
- Move baked wonton chips to serving plate and top with marinated tuna, diced pineapple, jalapeño slices, diced avocado, and sesame seeds. Drizzle with spicy mayo and top with scallion greens.
