How to Make Passion Fruit Bars
- Preheat your oven to 350°F (175°C) and line an 8x8 baking dish with parchment paper or foil for easy removal later on.
- Cream together the unsalted butter and ¼ cup of sugar in a food processor until light and fluffy, about 2-3 minutes.
- Combine the sifted all-purpose flour and salt with the creamed mixture, pulsing until it forms a crumbly dough.
- Press the dough evenly into the bottom of the prepared baking dish. Bake for 12-15 minutes until lightly golden.
- Whisk together the eggs and passion fruit purée in a large bowl until frothy. Gradually mix in 1½ cups of sugar and ¼ cup sifted flour.
- Pour the filling over the cooled crust. Bake for 25-35 minutes, until edges firm up but center remains slightly jiggly.
- Cool the bars on the counter for about an hour, then transfer to the refrigerator for at least 1 hour before slicing.
- Cut into 2-inch squares, optionally dust with powdered sugar, and serve chilled.
