Ingredients

For the Crust
  • ½ cup Unsalted Butter Provides richness and structure; feel free to swap for salted butter and omit added salt.
  • ¼ cup Granulated Sugar Sweetens the crust; adjust based on sweetness preference if using sweetened passion fruit purée.
  • cups All-Purpose Flour Acts as a base for the crust; sifting helps avoid lumps for a perfect texture.
  • teaspoon Salt Enhances flavors; omit if using salted butter.
For the Filling
  • 4 large Eggs Adds structure and richness; using room temperature eggs promotes better emulsification.
  • ½ cup Passion Fruit Purée The star of the show providing that unforgettable sweet-tart flavor; consider using frozen seedless for convenience.
  • cups Granulated Sugar Sweetens the filling; adjust based on your sweetness preference relative to the passion fruit.
  • ¼ cup All-Purpose Flour Helps thicken the filling; make sure to sift for a smooth blend.
Optional Topping

Method

How to Make Passion Fruit Bars
  1. Preheat your oven to 350°F (175°C) and line an 8x8 baking dish with parchment paper or foil for easy removal later on.
  2. Cream together the unsalted butter and ¼ cup of sugar in a food processor until light and fluffy, about 2-3 minutes.
  3. Combine the sifted all-purpose flour and salt with the creamed mixture, pulsing until it forms a crumbly dough.
  4. Press the dough evenly into the bottom of the prepared baking dish. Bake for 12-15 minutes until lightly golden.
  5. Whisk together the eggs and passion fruit purée in a large bowl until frothy. Gradually mix in 1½ cups of sugar and ¼ cup sifted flour.
  6. Pour the filling over the cooled crust. Bake for 25-35 minutes, until edges firm up but center remains slightly jiggly.
  7. Cool the bars on the counter for about an hour, then transfer to the refrigerator for at least 1 hour before slicing.
  8. Cut into 2-inch squares, optionally dust with powdered sugar, and serve chilled.
