How to Make Coconut Pineapple Banana Bread
  1. Preheat the oven to 350°F (175°C).
  2. Mash ripe bananas in a mixing bowl until smooth.
  3. Whisk together flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
  4. Combine brown sugar, granulated sugar, eggs, melted butter, vanilla extract, and coconut milk with mashed bananas.
  5. Fold in the crushed pineapple and shredded coconut.
  6. Add the dry ingredients gradually, mixing until just combined.
  7. Pour the batter into a greased 9×5-inch loaf pan.
  8. Bake for 50-55 minutes, or until a toothpick comes out clean.
  9. Cool the loaf in the pan for 10 minutes, then transfer to a wire rack.
