- Prepare Tofu: Press the extra-firm tofu for at least 15 minutes, then tear it into bite-sized pieces. In a shallow bowl, mix cornstarch, rice flour, black pepper, Kashmiri chili powder, salt, and baking powder until well combined.
- Make the Batter: Stir in ginger garlic paste, oil, and enough water to create a thick batter that can coat the tofu effectively.
- Coat Tofu: Toss the pressed tofu pieces in the batter until each piece is generously coated.
- Cooking Method: Spread the battered tofu on a parchment-lined baking sheet and bake at 400°F (205°C) for 20-25 minutes until golden and crisp, or heat oil in a skillet and pan-fry for 5-6 minutes, flipping regularly.
- Make Sauce: In the same skillet, sauté chopped garlic and hot green chilies until golden brown. Add curry leaves and mint, followed by the spices, soy sauce, and sambal. Stir in the non-dairy yogurt, adding water as needed.
- Combine: Gently add the crispy tofu to the sauce, tossing to coat completely.
- Serve: Enjoy your Tofu Majestic immediately, either on its own or with laccha onions and chutney.
