Ingredients
  

For the Batter
  • 1 block extra-firm tofu pressed for at least 15 minutes
  • 1 cup cornstarch can substitute arrowroot or potato starch
  • ½ cup rice flour ensure gluten-free
  • 1 tsp black pepper reduce for milder dish
  • 1 tsp Kashmiri chili powder substitute regular chili powder for more spice
  • 1 tsp salt adjust to taste
  • 1 tsp baking powder choose gluten-free if necessary
  • 1 tbsp ginger garlic paste or use fresh minced ginger and garlic
For the Sauce
  • 2 tbsp oil for frying or baking
  • 2 hot green chilies or use bell peppers for milder version
  • 8 leaves curry leaves or use lime zest if unavailable
  • ¼ cup mint or substitute with cilantro
  • 1 tbsp ground coriander fresh leaves can be used as a substitute
  • 1 tbsp garam masala adjust quantity to taste
For Flavor Enhancers
  • 2 tbsp soy sauce tamari for gluten-free option
  • 1 tbsp sambal oelek or use a milder chili paste
  • ½ cup non-dairy yogurt or nut-free yogurt if needed
  • water to adjust sauce consistency

Method
 

Cooking Instructions
  1. Prepare Tofu: Press the extra-firm tofu for at least 15 minutes, then tear it into bite-sized pieces. In a shallow bowl, mix cornstarch, rice flour, black pepper, Kashmiri chili powder, salt, and baking powder until well combined.
  2. Make the Batter: Stir in ginger garlic paste, oil, and enough water to create a thick batter that can coat the tofu effectively.
  3. Coat Tofu: Toss the pressed tofu pieces in the batter until each piece is generously coated.
  4. Cooking Method: Spread the battered tofu on a parchment-lined baking sheet and bake at 400°F (205°C) for 20-25 minutes until golden and crisp, or heat oil in a skillet and pan-fry for 5-6 minutes, flipping regularly.
  5. Make Sauce: In the same skillet, sauté chopped garlic and hot green chilies until golden brown. Add curry leaves and mint, followed by the spices, soy sauce, and sambal. Stir in the non-dairy yogurt, adding water as needed.
  6. Combine: Gently add the crispy tofu to the sauce, tossing to coat completely.
  7. Serve: Enjoy your Tofu Majestic immediately, either on its own or with laccha onions and chutney.
