For the Salad
  • 4 slices watermelon thick slices (3/4 - 1 inch)
  • 4 cups arugula peppery green
  • 1/2 cup unsalted pistachios lightly crushed
  • 1/2 cup blue cheese creamy; swap with feta or goat cheese if desired
For the Dressing
  • 1/4 cup balsamic glaze sweet acidity
  • 2 tablespoons extra virgin olive oil for brushing and drizzling
  • 2 tablespoons lemon juice freshens up the salad

Method
 

Preparation
  1. Prepare the Dressing by combining arugula, blue cheese, crushed pistachios, lemon juice, olive oil, salt, and pepper in a bowl. Stir gently and set aside.
  2. Shape the watermelon by cutting thick circular shapes using a cookie cutter. Pat them dry with paper towels.
  3. Brush both sides of each watermelon slice with olive oil.
  4. Heat the grill over high heat until smoking, about 5 minutes.
  5. Grill the watermelon slices for 2-3 minutes on each side until grill marks appear.
  6. Assemble the salad by sprinkling salt over grilled watermelon, topping with the arugula mixture, and drizzling balsamic glaze.
