  • 1 large Onion Cut into thick pieces.
For the Seasoning
  • 2 teaspoons Kosher Salt Adjust to taste.
  • 1 teaspoon Pepper Black or white pepper.
  • 1 teaspoon Garlic Salt Fresh minced garlic is an alternative.
  • 1 teaspoon Thyme Use three times quantity if dried.
For Moisture and Flavor
  • 2 cups Beef Broth Low-sodium is preferred.

Preparation
  1. Pat the beef roast dry with paper towels to ensure a beautiful sear.
  2. Cut the onion into thick pieces.
  3. Place the sliced onions at the bottom of the slow cooker.
  4. Season the top of the roast generously with kosher salt, pepper, garlic salt, and thyme.
  5. Pour the beef broth around the roast.
  6. Cover and cook on LOW for 8 hours or HIGH for 6 hours.
  7. Once tender, remove the roast and let it rest for 15 minutes.
