Preparation
- Pat the beef roast dry with paper towels to ensure a beautiful sear.
- Cut the onion into thick pieces.
- Place the sliced onions at the bottom of the slow cooker.
- Season the top of the roast generously with kosher salt, pepper, garlic salt, and thyme.
- Pour the beef broth around the roast.
- Cover and cook on LOW for 8 hours or HIGH for 6 hours.
- Once tender, remove the roast and let it rest for 15 minutes.
