For the Skillet
  • 2 tablespoons Olive Oil
  • 1 medium Onion chopped
  • 1 medium Bell Pepper chopped
  • 3 cloves Garlic minced
  • 1 can Chickpeas rinsed and drained
  • 3 cups Cooked Rice
  • 1 can Diced Tomatoes with juice
  • 1 cup Vegetable Broth low-sodium preferred
  • 2 tablespoons Taco Seasoning adjust to taste
  • to taste Salt and Pepper
For Toppings
  • 1 cup Shredded Cheese optional
  • 1/2 cup Sour Cream optional
  • 1 medium Avocado sliced
  • 1/4 cup Cilantro chopped

Method
 

Cooking Instructions
  1. Heat olive oil in a 10-inch skillet over medium heat. Add chopped onion and bell pepper; sauté for 5-7 minutes until softened.
  2. Stir in minced garlic and cook for an additional minute.
  3. Add chickpeas, cooked rice, diced tomatoes, vegetable broth, and taco seasoning. Mix until evenly combined.
  4. Bring to a simmer, reduce heat to low, cover, and let cook for 15-20 minutes, until liquid is mostly absorbed.
  5. Stir occasionally to prevent sticking. Season with salt and pepper before serving.
  6. Serve hot, topped with shredded cheese, sour cream, avocado, and cilantro.
