- Prepare the Ginger: Start by peeling the fresh gingerroot and slicing it into 1/8" thick rounds.
- Make the Sugar Syrup: In a large saucepan, combine water and granulated sugar, and heat over medium heat until dissolved.
- Cook the Ginger: Add the sliced ginger to the boiling sugar syrup and boil for about 45 minutes until tender.
- Cool and Drain: Drain the ginger slices using a fine mesh strainer and let them rest on a drying rack for 30 minutes.
- Sugar Coating: Toss the ginger slices in extra granulated sugar to coat thoroughly.
- Dry and Store: Place coated ginger on wax paper to dry completely and store in an airtight container.
