  • 1 cup Fresh Gingerroot Peeled and sliced into 1/8" thick rounds
  • 1 cup Granulated Sugar Can substitute with coconut sugar
  • 1 cup Water
For Coating
  • 1/2 cup Extra Sugar For coating

Method
 

Instructions
  1. Prepare the Ginger: Start by peeling the fresh gingerroot and slicing it into 1/8" thick rounds.
  2. Make the Sugar Syrup: In a large saucepan, combine water and granulated sugar, and heat over medium heat until dissolved.
  3. Cook the Ginger: Add the sliced ginger to the boiling sugar syrup and boil for about 45 minutes until tender.
  4. Cool and Drain: Drain the ginger slices using a fine mesh strainer and let them rest on a drying rack for 30 minutes.
  5. Sugar Coating: Toss the ginger slices in extra granulated sugar to coat thoroughly.
  6. Dry and Store: Place coated ginger on wax paper to dry completely and store in an airtight container.
