How to Make Sweet Potato Chicken Nuggets
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or spray it lightly with oil.
- In a large mixing bowl, mash the cooked sweet potato until mostly smooth. Add the ground chicken and seasonings, mixing thoroughly.
- In a separate bowl, whisk together the all-purpose flour, corn starch, and remaining dry ingredients.
- Wet your hands with cold water to prevent sticking and shape tablespoons of the chicken mixture into nuggets. Dredge in the flour mix.
- Arrange nuggets on the baking sheet and lightly spray the tops with oil. Bake for about 20 minutes, flipping halfway through.
- Serve warm with your favorite dipping sauces!
