  • 1/2 cup Red Onion Thinly sliced.
  • 1 whole Jalapeño Optional, adjust for spice preference.
  • 1/4 cup Cilantro Chopped.
  • 1/2 cup Feta Cheese Optional, crumbled.
For the Dressing
  • 1 lime Lime Juice Freshly squeezed.
  • 2 tbsp Honey or Maple Syrup Sweeten to taste.
  • 3 tbsp Olive Oil
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Black Pepper Freshly ground.

Method
 

Prepare Salad
  1. Dice the fresh pineapple into bite-sized chunks and slice the cucumber.

Make Dressing
  1. In a small bowl, whisk together lime juice, honey or maple syrup, olive oil, salt, black pepper, and red pepper flakes until smooth.
Combine
  1. In a large bowl, combine the pineapple, cucumber, onion, cilantro, and jalapeño. Toss gently.
Dress Salad
  1. Drizzle the dressing over the salad and toss to coat.
Chill and Serve
