  • 2 cups Whole Kernel Corn frozen and thawed can be used
  • 1 can Cream-Style Corn can substitute with blended regular corn and cream
  • 8.5 oz Corn Muffin Mix Jiffy mix is a common choice
  • 1 cup Sour Cream can be substituted with plain Greek yogurt
  • ½ cup Butter melted; margarine can be used as an alternative
  • 2 large Eggs
  • 3 tbsp Honey plus more for glazing
  • ½ tsp Salt
Optional Ingredients
  • 1 pinch Nutmeg or Cinnamon for added warmth
  • 1 cup Shredded Cheese for a cheesy variant
  • 1 small Diced Jalapeño for a spicy kick

Method
 

General Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, combine the corn muffin mix, cream-style corn, whole kernel corn, sour cream, melted butter, eggs, salt, and 2 tablespoons of honey. Mix until just combined.
  3. Pour the mixture into the prepared dish and spread it evenly. Bake in the preheated oven for 45-50 minutes or until golden and set.
  4. In the last 5 minutes of baking, warm the remaining tablespoon of honey and drizzle it over the casserole.
  5. Let the casserole cool for 5-10 minutes before serving.
