- Heat oil in a skillet over medium-high heat. Season your chicken breast with salt, and brown it on both sides for about 3 minutes each. Once golden brown, remove and set aside.
- In the same skillet, add chopped onion, minced garlic, and grated fresh ginger. Sauté these aromatic ingredients until they become softened, which should take around 3 minutes.
- In a bowl, reserve some peach juice and whisk it together with honey, rice vinegar, Thai chilli sauce, soy sauce, lime juice, fish sauce, and dried lemongrass. Add cornstarch and whisk until the mixture is smooth and well combined.
- Return the chicken, sliced red bell pepper, and California cling peach slices to the skillet. Pour in the prepared sauce, stir it all together, and let it cook until the sauce thickens and the chicken is cooked through, about 5 minutes.
- Garnish your dish with chopped peanuts and fresh cilantro. Serve this delicious Thai Peach Chicken hot, alongside rice or noodles, topped with lime wedges for that extra zing!
