  • 1 head Bibb Lettuce substitute with Boston Bibb or romaine for variety
  • 1 whole Avocado ensure it’s ripe for best texture
  • 2 stalks Celery thinly sliced; fennel can be used as substitute
  • 1 cup Shelled Edamame ensure it’s cooked and shelled
  • 1 whole English Cucumber feel free to swap with any cucumber variety
For the Dressing
  • 1/2 cup Green Goddess Dressing swap in vegan mayo for plant-based version
For Seasoning
  • to taste Flaky Sea Salt
  • to taste Cracked Black Pepper

Method
 

How to Make
  1. Tear the Bibb lettuce into bite-sized pieces and place it in a large salad bowl.
  2. Slice the ripe avocado and gently add it to the bowl with the lettuce.
  3. Thinly slice the celery and mix it into the salad.
  4. Add the cooked and shelled edamame to the bowl.
  5. Halve the English cucumber lengthwise and thinly slice it. Toss it into the salad.
  6. Drizzle the Green Goddess Dressing over the salad and sprinkle with flaky sea salt and cracked black pepper.
  7. Gently toss all the ingredients together until well combined. Serve immediately.
