- Cut the cauliflower into small florets and place on a parchment-lined baking sheet.
- Drizzle olive oil over the florets and sprinkle with cumin, sumac, salt, and pepper. Toss gently to coat.
- Roast the cauliflower for 25-35 minutes, tossing halfway, until golden and fork-tender.
- While roasting, whisk tahini and lemon juice in a bowl, gradually add water for desired consistency.
- Once roasted, drizzle tahini sauce over the cauliflower and sprinkle with fresh parsley.
