For the Cauliflower
  • 1 head Cauliflower cut into small florets
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 2 tablespoons Sumac
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper freshly cracked
For the Tahini Sauce
  • 1/4 cup Tahini
  • 2 tablespoons Water adjust for creaminess
  • 2 tablespoons Lemon Juice
For Garnishing
  • 2 tablespoons Parsley fresh, chopped

Method
 

Preparation and Cooking
  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into small florets and place on a parchment-lined baking sheet.
  3. Drizzle olive oil over the florets and sprinkle with cumin, sumac, salt, and pepper. Toss gently to coat.
  4. Roast the cauliflower for 25-35 minutes, tossing halfway, until golden and fork-tender.
  5. While roasting, whisk tahini and lemon juice in a bowl, gradually add water for desired consistency.
  6. Once roasted, drizzle tahini sauce over the cauliflower and sprinkle with fresh parsley.
