For the Salmon
  • 4 fillets Fresh Salmon Long, fresh fillets preferred
  • 2 tablespoons Olive Oil High-quality extra virgin
  • to taste Salt
  • to taste Pepper
For the Stuffing
  • 2 cups Baby Spinach Fresh
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Paprika
  • 1/4 teaspoon Cayenne Pepper
  • 1 cup Feta Cheese Creamy and tangy
  • 1/2 cup Parmesan Cheese Freshly grated
  • 1/2 cup Roasted Red Peppers Chopped

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice lengthwise cuts into the salmon without cutting all the way through.
  3. Brush the salmon with olive oil and season generously with salt and pepper.
  4. Sauté the spinach in a pan with a drizzle of olive oil, Italian seasoning, paprika, and cayenne until wilted, about 2-3 minutes.
  5. Combine the wilted spinach with chopped roasted red peppers, feta, and parmesan.
  6. Stuff the spinach-feta mixture evenly into the cuts of the salmon.
  7. Bake the salmon for 12-17 minutes, depending on its thickness.
  8. Check the doneness by slicing into the thickest part of the salmon.
