Ingredients

For the Dough
  • 3 cups all-purpose flour or cake flour; substitute with gluten-free flour if desired
  • 2 tsps instant dry yeast or fresh yeast
  • 2 tbsp sugar or sugar alternative
  • 1 tsp salt
  • 1 cup warm water not too hot
  • 1 cup milk or non-dairy milk
  • 2 tbsp oil canola or sunflower; or melted butter
For the Custard Filling
  • 1 cup prepared custard filling homemade, store-bought, or egg-based

Equipment

  • Large Bowl
  • saucepan
  • Non-stick pan
  • Cloth

Method

Making the Buns
  1. In a large bowl, combine your yeast, sugar, salt, and flour. Heat warm water, milk, and oil in a saucepan, then add to the dry mixture, stirring until well combined.
  2. Knead the dough for about 5 minutes until it’s smooth and elastic. Cover with a cloth and let it rise in a warm spot for 1 hour or until doubled in size.
  3. While the dough is rising, create your custard filling using your preferred method.
  4. Once the dough has risen, punch it down and knead for another 3 minutes. Divide it into 12 equal pieces, rolling each into a circle. Place a teaspoon of custard on one half, fold the other half over, and seal the edges. Let the buns rest for 15 minutes.
  5. Carefully heat a non-stick pan on low. Place the buns inside, cover, and cook for 10 minutes. Gently flip and cook for an additional 5 minutes, until they’re golden and puffed.
