  • 3 tbsp Tahini Rich, nutty flavor.
  • 200 g Greek Yoghurt Substitute with dairy-free yogurt for a vegan option.
  • 2 tbsp Citrus Juice Lemon or Lime, or use orange juice.
  • 1 tbsp Maple Syrup Honey is a fine substitute for non-vegan diets.
  • 1 tbsp Chili Adjust based on preference.

Preparation
  1. Preheat the oven to 200°C (400°F) for perfect roasting.
  2. Prepare the carrots by cleaning them thoroughly and cut larger ones in half lengthwise.
  3. Mix tahini, Greek yoghurt, citrus juice, maple syrup, and chili in a bowl.
  4. Arrange carrots on a baking tray, drizzle with olive oil, and sprinkle with salt. Roast for 40-50 minutes.
  5. Serve by drizzling with tahini yoghurt mixture and garnish with fresh herbs or nuts as desired.
