Ingredients
  

For the Ribs
  • 2 lbs St. Louis or Baby Back Ribs
  • 1 tbsp Morton Kosher Salt Adjust if using table salt
For the Dry Rub
  • 1 cup Brown Sugar Coconut sugar is a substitute
  • 1 tbsp Smoked Paprika Sweet paprika is a substitute
  • 1 tbsp Granulated Garlic Fresh garlic can be used for stronger flavor
  • 1 tbsp Granulated Onion Substitute with sautéed fresh onion if desired
  • 1 tbsp Chinese Five Spice Mix of spices used in Asian cuisine
  • 1 tbsp Ground Ginger Fresh ginger is preferred
  • 1 tsp White Pepper Black pepper is a suitable alternative
For the Glaze
  • 2 tbsp Sesame Oil Vegetable oil can substitute
  • 3 cloves Garlic Freshly minced
  • 1 tbsp Grated Fresh Ginger
  • 1/2 cup Soy Sauce Gluten-free option available
  • 1/4 cup Rice Vinegar Apple cider vinegar can work
  • 1/4 cup Honey Use maple syrup for a vegan option
  • 1 tbsp Red Pepper Flakes Adjust based on spice preference

Method
 

Basic Instructions
  1. Preheat your oven to 275°F for tender ribs.
  2. Remove the silverskin from the ribs and cut into portions.
  3. Mix the dry rub ingredients thoroughly and coat the ribs.
  4. Wrap each rib portion in foil and bake for 2-2.5 hours (baby back) or 2.5-3 hours (St. Louis).
  5. Sauté garlic and ginger in sesame oil; add remaining glaze ingredients and boil until thickened.
  6. Unwrap ribs, glaze them, and broil on high for 2-3 minutes until charred.
