- Arrange both trays in the oven, placing the carrots on the top shelf.
- Remove the chickpeas after 10 minutes; season and return to the oven for 20-25 minutes.
- Roast the carrots for a total of 30 minutes, tossing halfway through.
- Mix yogurt sauce ingredients together and let sit for at least 20 minutes.
- Assemble by spreading yogurt sauce, piling roasted carrots and chickpeas, then garnishing.
