For the Chickpeas
  • 1 can Chickpeas One 400g can, drained.

  • 1 tsp Garlic Powder Enhances flavor profile.
  • 1 tsp Onion Powder Adds depth; adjust for taste.
  • 1 tsp Black Pepper Freshly ground is best.
  • Salt Cooking Salt Season to taste.
For the Yogurt Sauce
  • 200 g Plain Yogurt Greek yogurt preferred for thickness.
  • 1 tbsp Lemon Juice Adds refreshing acidity.
  • 1 clove Garlic Freshly grated.
  • 2 tbsp Cilantro/Coriander Freshness enhancer; parsley as substitute.
  • Pistachios (optional) For extra crunch; can omit.

Method
 

Cooking Instructions
  1. Preheat the oven to 200°C (425°F).
  2. Prepare the chickpeas by spreading them out on a tray while damp.
  3. Toss the carrots in the maple syrup, sriracha, olive oil, and seasonings.
  4. Arrange both trays in the oven, placing the carrots on the top shelf.
  5. Remove the chickpeas after 10 minutes; season and return to the oven for 20-25 minutes.
  6. Roast the carrots for a total of 30 minutes, tossing halfway through.
  7. Mix yogurt sauce ingredients together and let sit for at least 20 minutes.
  8. Assemble by spreading yogurt sauce, piling roasted carrots and chickpeas, then garnishing.
