Making Jalapeno Peach Chicken
- Mix the glaze ingredients in a medium bowl until well incorporated and smooth.
- Pat the chicken dry using paper towels.
- Combine salt, black pepper, and chili powder in a small bowl.
- Season the chicken evenly with the spice mixture.
- Heat a large nonstick skillet over medium heat and add the olive oil. Add the chicken thighs and cook for 5 minutes. Flip the chicken, reduce heat to medium-low, and cook for an additional 5 minutes.
- Raise the heat back to medium and add the jalapeño peppers to the same skillet. Cook for about 3 minutes.
- Incorporate the sliced peaches into the skillet with the jalapeños. Cook for another 3 minutes.
- Pour the peach glaze into the skillet, stirring to coat the peaches and jalapeños evenly.
- Return the chicken to the skillet, spooning the luscious glaze over the top. Cook for 1-2 minutes until the chicken is heated through.
- Serve warm and enjoy!
