Making the Pizza
- In a large bowl, mix warm water and active dry yeast. Let this sit for about 5 minutes until it becomes bubbly and fragrant.
- Stir in the all-purpose flour, olive oil, and salt until a sticky dough forms.
- Cover the bowl with plastic wrap and set it in a warm spot for about 90 minutes.
- Grease a cast iron skillet generously with olive oil. Carefully transfer the risen dough into the skillet.
- Cover the skillet and let the dough rise again for about 30 minutes.
- Preheat your oven to 500°F (or 475°F if you prefer a non-broiled version).
- Spread marinara sauce generously over the dough, then sprinkle with low-moisture mozzarella cheese and arrange thick-cut pepperoni slices on top.
- Pop the skillet into the oven and bake for 20-25 minutes until the cheese is golden and bubbly.
- Once out of the oven, let the pizza cool before drizzling hot honey on top.
