How to Make Spicy Buffalo Wing Poppers
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Carefully halve the jalapeños lengthwise, removing seeds and membranes. Wear gloves for safety.
  3. In a mixing bowl, combine the cooked shredded chicken, crumbled blue cheese, cream cheese, buffalo wing sauce, garlic powder, onion powder, salt, and black pepper. Mix until blended.
  4. Generously fill each jalapeño half with the chicken mixture, packing it well.
  5. Arrange the stuffed jalapeños in a single layer on the baking sheet.
  6. Bake for 18-20 minutes until jalapeños are tender and filling is bubbly and golden.
  7. Drizzle with extra buffalo sauce and sprinkle with blue cheese and chives before serving.
