Ingredients

For the Brine

  • 0.5 cups Sugar Balances the sharpness of vinegar.

For the Flavor
  • 4 cloves Garlic Cloves Smashed; don’t skip this ingredient.
  • 1-2 tbsp Crushed Red Pepper Flakes Adjust based on preference.
  • 2-3 pieces Jalapeños Sliced; can be increased for more intensity.
  • 1 piece Sweet Red Pepper Chopped; balances spice with sweetness.
  • 1 tsp Black Peppercorns Optional; adds mild heat and depth.
  • 1 tbsp Fresh Dill or Thyme Optional; customize to your taste.

Method
 

Directions
  1. Gently place the duck and chicken eggs in a pot filled with cold water. Bring to a gentle boil. Simmer duck eggs for 12 minutes and chicken eggs for 9-10 minutes.
  2. Once cooked, transfer the eggs to an ice water bath. Let them cool for 10-15 minutes.
  3. In a saucepan, combine white vinegar, water, sugar, salt, and optional black peppercorns. Bring it to a boil and stir until dissolved, then allow to cool for about 10 minutes.
  4. In clean glass jars, start layering your flavor base with smashed garlic, crushed red pepper flakes, sliced jalapeños, and chopped sweet red pepper.
  5. Carefully peel the cooled eggs and place them into the jars, ensuring they are snug.
  6. Fill each jar with your cooled brine, making sure to cover the eggs completely. Seal the jars tightly.
  7. Let your jars sit in the fridge for at least 3 days to allow flavors to deepen beautifully.
