How to Make Southern Maple Sweet Potato Casserole
  1. Preheat your oven to 400°F. Cube the sweet potatoes and coat with olive oil, cinnamon, and nutmeg. Roast for 50-60 minutes until tender.
  2. Lower oven temperature to 375°F. Grease a baking dish. Combine sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, spices, raisins, and half of the marshmallows in a bowl.
  3. Spoon the mixture into the baking dish. Dot with butter and add remaining marshmallows on top.
  4. In a bowl, mix pecans with maple syrup and sprinkle over the casserole.
  5. Cover with foil and bake for 15 minutes, then uncover and bake another 15 minutes until golden.
  6. Let cool slightly before serving.
