How to Make Southern Maple Sweet Potato Casserole
- Preheat your oven to 400°F. Cube the sweet potatoes and coat with olive oil, cinnamon, and nutmeg. Roast for 50-60 minutes until tender.
- Lower oven temperature to 375°F. Grease a baking dish. Combine sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, spices, raisins, and half of the marshmallows in a bowl.
- Spoon the mixture into the baking dish. Dot with butter and add remaining marshmallows on top.
- In a bowl, mix pecans with maple syrup and sprinkle over the casserole.
- Cover with foil and bake for 15 minutes, then uncover and bake another 15 minutes until golden.
- Let cool slightly before serving.
