  • 1 teaspoon salt no substitutes necessary
  • 1 cup salted butter can use unsalted if preferred
  • 1/2 cup water cold water yields the best results
  • 1 cup sourdough discard ensure it's active
For the Almond Frangipane Filling
  • 1 cup almond flour or ground walnuts for a different flavor
  • 1/2 cup granulated sugar brown sugar provides deeper flavor
  • 1 large egg for vegan, replace with a flax egg
  • 1 teaspoon almond extract vanilla extract can be used for a different twist
  • 1 teaspoon vanilla extract use more almond extract for stronger flavour
For the Topping
  • 1/4 cup slivered almonds or omit for a simpler topping

Method
 

Preparation Steps
  1. In a large bowl, mix together the all-purpose flour and salt.
  2. Cut in the chilled salted butter until the mixture resembles coarse crumbs, then fold in the active sourdough discard until just combined.
  3. Wrap the dough in plastic wrap and chill in the refrigerator for about 30 minutes.
  4. In a separate bowl, beat together the almond flour, granulated sugar, egg, almond extract, and vanilla extract until smooth.
  5. Roll out the puff pastry on a lightly floured surface to about 1/4 inch thick. Spread the almond frangipane evenly over the surface.
  6. Cut into strips and roll each strip like a spiral.
  7. Preheat your oven to 375°F (190°C).
  8. Place the rolled cruffins in a lined muffin tin, upright. Sprinkle with slivered almonds.
  9. Bake for 30 minutes until golden brown.
  10. Let the cruffins cool slightly in the tin and dust with powdered sugar before serving.
