Ingredients
  

For the Marinade
  • 1 Tbsp Olive Oil Substitute with vegetable oil for a neutral flavor.
  • 4 cloves Garlic Minced; fresh garlic is recommended.
  • 1 Tbsp Lime Juice From 1/2 lime; use fresh juice for optimal zing.
  • 1 Tbsp Cajun Spice Store-bought or homemade.
  • 1/2 tsp Salt Adjust based on your preferences.
For the Fajitas
  • 1 lb Large Shrimp Peeled and deveined; fresh or frozen.
  • 2 Bell Peppers Sliced; any color.
  • 1/2 Medium Onion Sliced; yellow or red.
  • 1/4 cup Cilantro Chopped; substitute with parsley if desired.
  • 2-3 tsp Lime Juice From 1/2 lime; squeezed fresh.
For Serving
  • 8 Small Flour Tortillas Try whole wheat or corn tortillas.
  • Jalapeno Ranch To serve.
  • 1 Avocado Sliced; swap with guacamole if preferred.
  • 1 Lime Cut into wedges for garnish.

Method
 

How to Make Shrimp Fajitas
  1. In a small bowl, mix together olive oil, minced garlic, lime juice, cajun spice, and salt until well combined.
  2. Slice the bell peppers and onions, then combine them with half of the marinade in a medium bowl.
  3. Pat the shrimp dry with a paper towel. Mix the shrimp with the remaining marinade in a separate bowl.
  4. Heat a heavy skillet over medium heat with a drizzle of oil. Sauté the marinated shrimp for about 1-2 minutes.
  5. In the same skillet, add the marinated vegetables and sauté for around 10 minutes.
  6. Return the cooked shrimp to the skillet, add chopped cilantro, and squeeze fresh lime juice over the mixture.
  7. Warm the small tortillas and fill them with the shrimp and vegetable mixture. Top with jalapeno ranch, sliced avocado, and garnish with lime wedges.
