Ingredients
  

For the Steak
  • 1 pound Flank or Skirt Steak
  • 3 cloves Garlic minced
  • 1 teaspoon Onion Powder
  • 1 teaspoon Sweet/Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Chili Powder adjust to taste
  • 1/4 teaspoon Cayenne optional
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Chili Flakes Pink Himalayan Salt recommended
  • 2 tablespoons Extra Virgin Olive Oil
For the Tzatziki
  • 1/2 cup Feta Cheese crumbled
  • 1 cup Tzatziki Sauce homemade or store-bought
For Assembling
  • 4 pieces Fresh Pitas or Naan gluten-free pitas optional
  • 2 cups Lettuce chopped
  • 1/2 cup Pickled Red Onion
  • 1/2 cup Pepperoncini

Method
 

Preparation
  1. Preheat your oven to 475°F (245°C) and prepare a baking sheet by lining it with parchment paper or lightly oiling it.
  2. In a bowl, combine the flank or skirt steak with garlic, onion powder, paprika, cumin, oregano, chili powder, cayenne, lemon zest, salt, and olive oil. Mix well and marinate for 20-30 minutes.
  3. Spread the seasoned steak on the baking sheet and roast for about 10 minutes. Then, switch the oven to broil and cook for another 2-5 minutes until charred. Rest for 10 minutes before slicing.
  4. In another bowl, mix crumbled feta into your tzatziki sauce to enhance its richness.
  5. Warm your pita or naan, then fill it with sliced steak, lettuce, feta tzatziki, and any additional toppings before serving.
