Ingredients
  

For the Vegetables
  • 12 oz baby potatoes scrubbed and ready
  • 10 oz grape tomatoes halved if preferred
  • 6 oz broccoli florets for a crunchy contrast
For the Salmon
  • 1 lb salmon fillet no skin
  • 3 tbsp fresh minced garlic
  • 2 tsp Za’atar spice divided
  • 1 tsp coriander divided
For the Drizzle
  • Quality Extra Virgin Olive Oil
  • Salt
  • Pepper
  • 1 whole lemon juice of

Method
 

Cooking Instructions
  1. Preheat your oven to 400 degrees F.
  2. Combine the baby potatoes, grape tomatoes, and broccoli in a large bowl. Drizzle 2 tbsp of extra virgin olive oil and toss well.
  3. Season with salt and pepper, then add 1 tbsp minced garlic, 1 tsp za’atar spice, and 1/2 tsp coriander. Toss again.
  4. Transfer the seasoned veggies to a large, rimmed baking sheet.
  5. Pat the salmon fillet dry and season both sides with salt and pepper. Drizzle with extra virgin olive oil.
  6. Spread the remaining minced garlic evenly over the salmon. Sprinkle it with remaining za’atar and coriander.
  7. Cut the seasoned salmon into 4 equal pieces and place them on the baking sheet alongside the vegetables.
  8. Drizzle another amount of extra virgin olive oil over the salmon and veggies if desired.
  9. Bake the dish for 15-16 minutes until the salmon flakes easily.
  10. Remove from the oven and squeeze fresh lemon juice over the salmon.
