Cooking Instructions
- Preheat your oven to 400 degrees F.
- Combine the baby potatoes, grape tomatoes, and broccoli in a large bowl. Drizzle 2 tbsp of extra virgin olive oil and toss well.
- Season with salt and pepper, then add 1 tbsp minced garlic, 1 tsp za’atar spice, and 1/2 tsp coriander. Toss again.
- Transfer the seasoned veggies to a large, rimmed baking sheet.
- Pat the salmon fillet dry and season both sides with salt and pepper. Drizzle with extra virgin olive oil.
- Spread the remaining minced garlic evenly over the salmon. Sprinkle it with remaining za’atar and coriander.
- Cut the seasoned salmon into 4 equal pieces and place them on the baking sheet alongside the vegetables.
- Drizzle another amount of extra virgin olive oil over the salmon and veggies if desired.
- Bake the dish for 15-16 minutes until the salmon flakes easily.
- Remove from the oven and squeeze fresh lemon juice over the salmon.
