How to Make Wild Garlic Mac and Cheese
- In a large pot, bring salted water to a boil and add the macaroni. Cook for 6–8 minutes until al dente.
- In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly for about 5 minutes until it turns a light golden color.
- Gradually whisk in the milk, stirring continuously until smooth and thickened. Stir in the Parmesan and mature cheddar cheese, reserving some cheese for later, along with the Dijon mustard.
- Toss in the chopped spinach and wild garlic, stirring until they wilt into the sauce. Taste and season with salt and white wine vinegar.
- Preheat your oven to 180ºC/gas mark 4.
- Drain the cooked pasta and mix it with the creamy cheese sauce in an ovenproof dish. Top with reserved cheese.
- Place the dish in the oven and bake for 15–20 minutes or until golden brown and bubbling.
