  • 1 cup Mature Cheddar Cheese Sharp cheddar for more flavor
  • 1 tablespoon Dijon Mustard Leave out if you don't prefer mustard

  • 2 cups Spinach Kale can be used as a substitute
  • 1 cup Wild Garlic Regular garlic can be used but flavor will vary

  • 1 tablespoon White Wine Vinegar Lemon juice can be used as an alternative

Method
 

How to Make Wild Garlic Mac and Cheese
  1. In a large pot, bring salted water to a boil and add the macaroni. Cook for 6–8 minutes until al dente.
  2. In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly for about 5 minutes until it turns a light golden color.
  3. Gradually whisk in the milk, stirring continuously until smooth and thickened. Stir in the Parmesan and mature cheddar cheese, reserving some cheese for later, along with the Dijon mustard.
  4. Toss in the chopped spinach and wild garlic, stirring until they wilt into the sauce. Taste and season with salt and white wine vinegar.
  5. Preheat your oven to 180ºC/gas mark 4.
  6. Drain the cooked pasta and mix it with the creamy cheese sauce in an ovenproof dish. Top with reserved cheese.
  7. Place the dish in the oven and bake for 15–20 minutes or until golden brown and bubbling.
