Ingredients
  

Chicken Marinade
  • 500 grams Chicken thigh fillets Can swap with chicken breast, pork, beef, or seafood
  • 2 stalks Lemongrass Use only the white part
  • 3 cloves Garlic Finely chopped or minced
  • 2 tablespoons Lime juice
  • 2 tablespoons Fish sauce Or use soy sauce for a non-fish option
  • 2 tablespoons Soy sauce Use all-purpose, not dark
  • 1 tablespoon Brown sugar
  • 1 tablespoon Vegetable oil For cooking the chicken
Nuoc Cham Sauce
  • 60 ml Rice vinegar
  • 1 tablespoon White sugar
  • 60 ml Water
  • 1 piece Red birds eye chili Finely chopped
Noodle Bowl
  • 200 grams Vermicelli noodles Soak until tender
  • 150 grams Fresh vegetables Carrots, cucumbers, iceberg lettuce, and bean sprouts
  • 1 bunch Mint
  • 1 bunch Cilantro
  • 1 piece Sliced red chili Optional garnish
  • 2 pieces Lime wedges Optional garnish

Method
 

Preparation Steps
  1. In a bowl, combine chicken thigh fillets with lemongrass, garlic, lime juice, fish sauce, soy sauce, brown sugar, and vegetable oil. Let it marinate for at least 1 hour.
  2. Heat a tablespoon of oil in a large pan over medium heat. Remove chicken from marinade and cook for 6 to 8 minutes, until fully cooked.
  3. In a bowl, mix together fish sauce, rice vinegar, water, white sugar, minced garlic, chopped chili, and lime juice for the Nuoc Cham sauce. Let it sit for 20 minutes.
  4. Soak vermicelli noodles in hot water for about 3 minutes until soft, then drain and rinse under cold water.
  5. Place noodles in serving bowls. Top with cooked chicken, fresh vegetables, and herbs. Drizzle with Nuoc Cham sauce and serve with lime wedges.
