Preparation Steps
- In a bowl, combine chicken thigh fillets with lemongrass, garlic, lime juice, fish sauce, soy sauce, brown sugar, and vegetable oil. Let it marinate for at least 1 hour.
- Heat a tablespoon of oil in a large pan over medium heat. Remove chicken from marinade and cook for 6 to 8 minutes, until fully cooked.
- In a bowl, mix together fish sauce, rice vinegar, water, white sugar, minced garlic, chopped chili, and lime juice for the Nuoc Cham sauce. Let it sit for 20 minutes.
- Soak vermicelli noodles in hot water for about 3 minutes until soft, then drain and rinse under cold water.
- Place noodles in serving bowls. Top with cooked chicken, fresh vegetables, and herbs. Drizzle with Nuoc Cham sauce and serve with lime wedges.
