Method
 

Preparation
  1. Begin by pounding and mincing the lemongrass to release its aromatic oils.
  2. In a mixing bowl, combine the minced lemongrass with remaining marinade ingredients. Place the wings in a ziplock bag, pour the marinade over, and seal tightly. Marinate for at least 4 hours or overnight.
  3. If grilling, preheat the grill to low heat (about 300°F) and grease the grates.
Cooking
  1. Place the marinated wings on the grill and cook for 20-25 minutes, turning occasionally.
  2. While grilling, combine glaze ingredients in a small saucepan and heat over medium until sugar dissolves.
  3. Flip wings, baste with the glaze, and grill for an additional 20 minutes.
  4. For oven option, preheat to 350°F, line a baking sheet with foil, place wings skin side up, and bake for 20-25 minutes; baste and flip, then roast for another 10-15 minutes.
  5. Serve garnished with chopped chili, cilantro, and peanuts. Offer remaining glaze on the side.
