Ingredients

  • 14-16 oz Extra Firm High-Protein Tofu Pressed firm tofu can be used if needed.
  • 1 cup Vital Wheat Gluten No substitutes for gluten-free.
  • 1/2-3/4 cup Water Add gradually for the right consistency.
For Flavor
  • 1/4 cup Nutritional Yeast Can be omitted for milder flavor.
  • 2 tsp Onion Powder Can swap with garlic powder.
  • 1-2 tsp Garlic Powder Adjust according to preference.
  • 1/2 tsp Sage Thyme can be a substitute.
  • 1 tsp Rosemary Omit for a delicate taste.
  • 1 tbsp No Chicken Better Than Bouillon Swap with any chicken-less bouillon if desired.
  • 1 tsp Liquid Smoke Omit for a cleaner taste.
For Coating
  • 2 tbsp Tapioca Starch or Corn Starch Cornstarch can be used as a substitution.
  • 1 tsp Salt Optional, adjust based on bouillon choice.
  • 3 tbsp Hickory Seasoning Substitute with preferred spice blend.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Blend the extra firm high-protein tofu in a food processor until it turns crumbly.
  3. Mix vital wheat gluten, water, nutritional yeast, and all the spices into the blended tofu.
  4. Knead the dough by hand for about one minute, shaping it into a loaf.
  5. Prepare a sheet of foil by coating it with oil and sprinkling half of the hickory seasoning in the center.
  6. Roll the dough tightly in the foil, positioning the remaining hickory seasoning on top before sealing.
  7. Bake in the preheated oven for 30 minutes, then carefully open the foil and bake for another 30-40 minutes.
  8. Cool at room temperature for a bit before refrigerating overnight.
