How to Make Stuffed Mushroom Casserole
  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Sauté quartered mushrooms with salt and pepper until soft and liquid mostly evaporated, about 7-9 minutes.
  4. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  5. Stir in cream cheese until well coated.
  6. Remove from heat and mix in mozzarella cheese, half of the breadcrumbs, and a quarter of the parmesan.
  7. Transfer the mixture to a greased 8x8-inch baking dish.
  8. Combine parsley, melted butter, remaining breadcrumbs, and parmesan in a separate bowl.
  9. Top the casserole with the breadcrumb mixture evenly.
  10. Bake for 25-30 minutes until the topping is golden.
