How to Make Stuffed Mushroom Casserole
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat.
- Sauté quartered mushrooms with salt and pepper until soft and liquid mostly evaporated, about 7-9 minutes.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in cream cheese until well coated.
- Remove from heat and mix in mozzarella cheese, half of the breadcrumbs, and a quarter of the parmesan.
- Transfer the mixture to a greased 8x8-inch baking dish.
- Combine parsley, melted butter, remaining breadcrumbs, and parmesan in a separate bowl.
- Top the casserole with the breadcrumb mixture evenly.
- Bake for 25-30 minutes until the topping is golden.
